Real estate developer Keith Rubenstein—whose investment projects include South Bronx Italian restaurant La Grata, Filtered Coffee, and fashion boutique 9J—gave updates on his planned food hall at 9 Bruckner Boulevard in an interview with the Commercial Observer. We first reported on the Bruckner food hall last summer but heard little of it since. Rubenstein says that they are currently designing it and it will include a big brewery, tasting room, and rooftop beer garden. They are also interviewing food vendors, though they have their own food concepts and lounges planned as well. [Commercial Observer]

Bronx-based business Baldor Specialty Foods was featured in a recent article by Popular Science on entrepreneurs fighting food waste in innovate ways. The company’s subsidiary Baldor Fresh Cuts supplies kitchens with cut-to-order produce. The resulting waste like carrot tops and peels, onion skins, pineapple cores, romaine leaves and watermelon rinds are given to chefs who make them into healthy cookies, juices, nutritional supplements, and croutons. Baldor’s food waste program is called SparCs (“scraps” spelled backwards). The company also designed a nutritional supplement made from dehydrated and pulverized leavings from twenty different vegetables sold under its private label, Urban Roots, that can be sprinkled on roasted vegetables and added to other foods . Marble Hill is the latest Bronx neighborhood to get its own food garden. The garden is located across the street from the Marble Hill Houses. Tenants from the NYCHA buildings can grow foods of their choice, like lettuce, spinach, cauliflower, eggplant, and pumpkins. The project is intended to not only feed residents, but to also educate them about where their food comes from and the benefits of investing in their community. The plants are expected to be ready by September when   residents plan to have a community harvest and potluck. [Bronx News 12]
